    Have you heard the tales of how a hush puppy came to be gifted with such a name - there are a few of them many surrounding tales of puppies hanging out at various locations from campfires on the wild west range, to confederate soldiers, to a fish fry, being quieted by a toss of bits of the fried dough. There's also a story that hush puppies evolved from nuns in the city of New Orleans.

    I think hush puppies came about by somebody adding a little milk or buttermilk to leftover fish fry coating and dropping it into the hot oil? These days we make them a little bit more intentionally whether or not we're frying fish, and we've added all sorts of things to them, though in reality they truly are the perfect companion to a plateful of fried catfish or your favorite fish.

    When frying some foods, deep frying is the more perfect solution and better than pan frying. Food is quickly cooked in a deep fryer with much less absorption of oil than pan frying.

      7.6 oz. Hush Puppy mix in a resealable bag. YOU WILL NEED TO SUPPLY 1 CUP BUTTERMILK , 1 EGGS, 1 Tbs. OIL, BUTTER or MARGARINE. HINT: Add bacon drippings in place of oil for additional southern flavor or if frying fish some oil from the fish fry. makes 18 nice size and delicious gluten free hush puppies.

      No buttermilk in your refrigerator? No problem! Replace buttermilk by adding 1 tablespoon lemon juice or white vinegar to a measuring cup and filling with milk to the 1-cup line; let stand for 5 minutes.

      VARIATION: in place of buttermilk try sour cream or cream corn.

      The texture should also be fairly light inside.If it's dense after you fry it, then you need to thin the batter out just a little bit more, so always do a test drop to make sure your batter is where you want it.
